Just wanted to ask if anyone can tell me what the “note taking reminders” are as referred to in the update summary? I want to make sure I’m not missing out on any life changing features!

In Settings now you can have evening reminders triggered to let you either recap the day’s notes, or add notes for tomorrow. There’s a lot going under the surface with this release, some of the bigger features had to wait for the next update!
